What We Offer

Our current lineup features classic cuts including rigatoni, fusilloni, and fettuccine. We will have the new shape again this week, Creste Di Gallo, a ridged macaroni with ruffled edges! Please note, gluten-free is not available this week while we solidify a stable source for the flour. Our traditional dough is made with simple, high-quality ingredients: 100% Italian durum wheat semolina, Berkeley Spring water, and organic eggs.

Chevre: Seasonal Chevre: “Sweet Pepper and Onion” will be our September Seasonal chevre celebrating these late summer beauties. We finely dice sweet peppers and onions, sauté them in olive oil and blend them into our fresh chevre. Thank you Spring Valley for your lovely sweet peppers this week.

Routine Chevres: Basil, Black Pepper and Classic

Feta: Greek style Feta in quarter or half pound portions in the brine, aged in brine 2 months. First Place Feta at the 2019 ADGA National Goat Cheese competition.

Bloomie Rinds:

Napoleon’s Peak – our Pyramid shaped ashed bloomy (my personal favorite of all our cheeses).

Snow Buttons – a cute little 1/4 pound patty of ashed bloomy.

Classic Camembert – a wheel of ooey gooey goodness.

Fresh Ricotta – made fresh each Friday available in 1/3 pound tubs.

Aged Semi-hard cheeses: This week we will have:

Caerphilly – A Welch cheddar – named after the town in Wales that developed this style of cheddar. Aged 12 months.

Alpsiago – This Alpine style cheese has been living her best life in our underground aging caves for 14 months. This is the first batch of 2025 and I was so excited when I cut into it this week. Lovely texture, bits of sharp flavor crystals, great snacking cheese.

Winter’s End – This tomme is steeped in a local dark stout beer at the time of hooping. The beer gives the cheese a slightly darker color and it ripens with a sharper parmesany flavor. These wheels have been aging in our underground aging caves for 8 months.

Goatgurt – a spoonable cultured treat with live active yogurt cultures.

Goatgurt Smoothies: A gut healthy drinkable yogurt available in Strawberry, Apple Cinnamon and Vanilla.
